Durello Dolce charmat method likes to surprise you. Its perlage reflects an image of amazement, inspired by the ambivalence that characterizes this sparkling wine. It’s a wine that you’d expect dry and that instead turns out to be sweet. A sweetness however contrasted by Durello’s peculiar acidity. This sparkling wine never stops playing with the unexpected, creating pleasure and surprise.

Farming System: Guyot with 7000 grapevines per hectare.
Harvest: handpicked in cases.
Winemaking Process: soft press with fermentation at controlled temperature 14-16 °C.
Aging: in stainless steel tanks on the yeasts for at least three months.
Organoleptic Characteristics: bright straw yellow color, long lasting perlage with fine grain. It has a wide and fragrant bouquet with floral scents and hints of white pulp fruit. In the mouth the sweetness is perfectly balanced by the pronounced acidity, prelude to a dry and clean ending.
Wine Pairings: goes well with baked cakes, fruit based puddings, fresh fruit salads.
